An Odd Dutch-type Egg Dish for Breaking Your Fast

Ingredients: 2-3 eggs; one or two shredded wheat biscuits; Agave (or your favorite pancake) syrup;

In a pot, put one inch of water. Put the pot on the stove burner at low heat to simmer the water, making steam. On a cooling-type metal rack, place the biscuit(s). Run the biscuit(s) quickly under a fine spray from the cold water faucet, in order to very lightly dampen the biscuit(s). Put the pot lid over the biscuits on the rack to catch and hold the steam bubbling up in the pot. Place the rack with the biscuits on the top of the pot, over the steaming water, until the buiscuts are steamed to your liking, and then put the biscuits in a shallow bowl.

On top of the biscuit(s), put two or three over-easy eggs, or poached eggs, or soft boiled eggs, peppered and salted to your taste.

Pour over all the eggs and biscuits in the bowl as much syrup as you like.

My mother made this dish for me long ago. Nobody I know wants me to fix it for them. But I believe such a dish would be on a restaurant menu for 7-10 dollars.

I love it! There is something about the combination of something sweet and eggs. I enjoy eating eggs with a piece of toast and raspberry jelly, bite for bite . There’s that combo again!
